Brown Rice Pudding

Did you know that you can make home-made rice pudding from only 5 simple ingredients? 🍮

Here comes our super tasty and very simple recipe, a healthy alternative to industrial dessert creams, free from any additifs and industrial sugar.

Ingredients4 servings

  • 1 cup brown rice
  • ¼ cup maple syrup
  • 3 1/2 cup full fat coconut milk
  • 1 tsp cinnamon, plus more for serving
  • 1 tsp vanilla extract

Directions

Combine all the ingredients except 1 cup of coconut milk into a small pot over high heat.

Bring the mixture to a boil. Once boiling, lower the heat and cover. Simmer the mixture stirring occasionally.

After 45 minutes, add the remaining 1 cup of coconut milk. Stir and continue cooking for an additional 20-25 minutes, or until the rice is tender and the mixture is thick and creamy.

Transfer the rice pudding into 4 small bowls. Serve it warm with a pinch of cinnamon on top!

Our tip: you can double the ingredients and store the extra portions in the fridge for a couple of days.

    This is what we Hispanics call, ARROZ CON LECHE. I had this as a child, only mom used evaporated milk. Mom sometimes used raisins, but I didn’t like them. Soooo good!

    Please provide nutritional data on these recipes. I’m on a low sodium diet and need to know the amount of sodium as well as the amount of saturated fat per serving. Thank You. I enjoy your App when shopping. It helps me to make informed decisions about what I’m consuming.

    I’m a diabetic hence I need that the nutritional value of the recipes I used be shown. Your site is very good and yummy but no nutritional information is provided. My experience… if it is too yummy possibly is not good for us the diabetic bunch.

    Being on this app, I’m to count my calories and break down my carbs, fats and proteins. I noticed the recipes do not list any of the nutritional facts.
